Blueberry Basil Limeade // Summer Slush Mocktail

Summer really is my favorite time of year. I love the long evenings, walking barefoot, outside, the amazing sunsets, and laying in the heat of the sun. Nothing beats a hot Summer day like a cool, refreshing, fruity drink, so I’m going to share one of my new, favorite mocktail recipes with you! August is definitely the hottest month of the year, so I’m sure we could all use a bit of refreshing.
In this recipe, I’m using the Santa Cruz Organic 100% Lime Juice. Santa Cruz products use only the highest quality ingredients, including Certified Organic and Non-GMO ingredients and processes. Using pure and natural ingredients ensures that not only will you feel great about the products you’re using, but that all of your cocktails/mocktails will taste great, too!
Ingredients:
- 1 cup Santa Cruz Organic 100% Lime Juice
- 1/2 Fresh Lemon—squeezed
- 1/2 cup Coconut Water
- 1 bundle Fresh Basil
- 1 cup Fresh Blueberries
- 3 tbsp Coconut Sugar
- Ice
Directions: In a small pan, sauté your 1/2 squeezed lemon juice, 1 cup of blueberries, the fresh basil, and the 3 tbsp of coconut sugar. As the ingredients blend, use a spoon to smash the blueberries, releasing their juices into the mixture. Once everything is well mixed and the ingredients have formed a thick, jelly look, remove from heat.
In a blender, add your 1 cup Santa Cruz Organic 100% Lime Juice, 1/2 cup Coconut Water, and ice (I did about 1 cup). Then add your sautéed ingredients, and blend it all together! You may need to add a bit more coconut water or sugar, depending on how tart the flavor is.
Pour the slushies into clear glasses (so you can admire the beautiful color), and top with a sprig of basil, a fresh blueberry, or two, and a slice of lemon! Serve while still frozen.
