I have always loved learning about and celebrating all kinds of cultures; I find other traditions fascinating and beautiful. One holiday that is always fun to celebrate is Chines New Year, and it's right around the corner! In honor of this holiday I decided to share one of my favorite

Whole Grain Brown Rice

Kikkoman Soy Sauce

from Walmart, I created a version that is simple enough for anyone to make and bonus- you can eat it and feel guilt free!

To make these simple lettuce wraps, you will need:

1 tbsp Olive Oil

1 lb Chicken Breasts or Tenders

1 Yellow Onion- medium

3 Green Onions

1 8oz can Water Chestnuts

1 tbsp fresh Ginger

2 cloves Garlic

1/4 cup Coconut Milk

1 cup

 Whole Grain Brown Rice

2/3 cup

Dole Pineapple Chunks

1 tbsp

Kikkoman Soy Sauce

1 head of Lettuce

On a cutting board, dice your onion and water chestnuts, slice the green onion- thinly, and mince the garlic and ginger. On a clean surface, finely dice the chicken. Heat up the olive oil in a sauté pan, over medium heat, then add the chicken and vegetables. While they cook, begin cooking the rice following the instructions included on the packaging. Once the chicken has cooked all the way through, add the coconut milk, soy sauce, and pineapple. Stir together, then reduce the heat to low and let it simmer while the rice finishes cooking. Once the rice has absorbed all of the water, place it into a bowl and top with the filling. Wash the lettuce and separate the leaves onto a plate. Spoon the rice and filling onto the lettuce leaves and serve with a side of soy sauce.
